Your gut lining makes an enzyme called diamine oxidase, or DAO, whose job is to break histamine down before it reaches your bloodstream. That is your first defense against a histamine load.
When your microbiome is disrupted, two things can go wrong together. Histamine-producing bacteria gain ground, and a compromised gut lining makes less DAO.
More histamine is produced and less is broken down, so more of it crosses into your circulation. That is the microbiome side of the reaction. Once loose in your tissues, histamine does something specific. It makes your small blood vessels leak, pushing fluid out into the surrounding tissue.
That leak is what you see and feel. The flushing, the puffy face, the congested nose, the swelling just under the skin. That escaped fluid has only one way out of the tissue. Your lymphatic system is what collects it and carries it back toward your blood.
If your lymph is sluggish, the fluid histamine pushed out lingers. The flush and the puffiness stay longer, and the whole reaction feels worse and slower to fade.

THE EVIDENCE
This gets missed because it falls between specialties. The allergist tests for allergy and finds none, and neither your gut's histamine handling nor your lymphatic clearance is part of that workup.
That the gut produces DAO to break down histamine, and that histamine makes blood vessels leak fluid, are both established human physiology.
Histamine intolerance itself is still a debated, emerging diagnosis, and the link to specific gut bacteria is early. Treat this as a plausible mechanism, not a settled condition.

Here is the move. Today, with a meal that has set you off before, eat it freshly cooked rather than aged, fermented, or reheated from yesterday, and add a freshly prepared fibrous vegetable or a handful of fresh berries. Then, reaction or not, take a brisk ten-minute walk and afterward lie with your legs up against a wall for five minutes, breathing four counts in and eight out.
The fresh food lowers the histamine load reaching you, and the fiber and polyphenols support the lining that produces the DAO that breaks histamine down, and that is the microbiome side. The walk and the legs-up position pump your lymphatic system through muscle contraction, breathing, and gravity, clearing the fluid histamine leaks into your tissues so a reaction fades faster, and that is the lymph side.
